How to Make Croatian Oblatne

How to Make Croatian Oblatne

Thanks to our friends Kristina from KakesbyspecialK & Ruža for this delicious Oblatne Recipe! I've followed their recipe which I have documented in the video and blog below.

How do you Make Delicious Croatian Oblatne?

  • 4 cups ground walnuts
  • 260 grams of butter
  • 1 cup of sugar
  • 5 pieces of dark chocolate (Uppermoda: I put in 3 rows of Dark Baking Chocolate as I really love chocolate)
  • 2 tea spoons of cocoa
  • 4 eggs
  • 5 oblatne wafer sheets = 150g

Like most delicious recipes, the trick is ensuring the filling is the right consistency and look. I think this obviously comes with practice and watching others make it. We’ve used the measurements below to create this oblatne, however with great bakers, they may add in a little bit of this or that as they have perfected “what it should look like”. I’ve included photos of the perfect consistency compared to how mine turned out. Please be gentle as this is my first time making this delicious treat! 😊

Step 1: Melt the butter and sugar in a saucepan on low-med heat. Continually stir.

Step 2: Once the butter and sugar has melted, add in the dark chocolate pieces.

Step 3: Add in the cocoa

Step 4: Add 4 cups of ground walnuts to the mixture and stir together.

Step 5: In a separate bowl, beat the 4 eggs.

Step 6: Add the eggs into the mixture

Step 7: Check the consistency. If it looks like the below you are good to go. At this point in time you may want to add a little more walnuts, chocolate or sugar to the mixture depending on your preferences.

Step 8: Turn off the burner and allow the mixture to cool down for about 10-15 minutes. We don’t want it to be too hot, however it needs to be warm so that it is easy to spread onto the oblatne wafers.

Step 9: Lay the wafer down so that the small squares or deeper side is facing you. Spread some of the filling onto this side of the wafer.

Tip: I put my mixture into a large measuring cup and put roughly 1 cup of filling between each wafer to ensure there was en even amount for each layer.

Step 10: Once the walnut mixture is spread on the first wafer, lay another wafer on top (deep size up) and press it. Not too hard, but just a little firm. Then repeat the process until you have a total of 4 walnut filing layers and 5 wafers.

Step 11: Wrap the oblatne in foil and place on top of a cutting board. Put another cutting board (or heavy object) on top. This will ensure it is flat and even. Put it into the fridge overnight or for 24 hours.

Step 12: The following day it is time to cut the oblatne. Take it out of the fridge.  I was impatient and made it hard for myself by cutting it straight out of the fridge.

Tip: Take it out about 20 minutes before you want to cut it so that it makes it easier to cut.

Step 13: I cut it as a diamond shape. Kristina & Ruža (the owners of this recipe) explained the best way to cut this. Cut it in vertical strips first and then follow the diagonal lines of the wafer to make it into the diamond shape. (photos below)

Storage: Store in the fridge.

That's it! I hope you enjoy and would love any comments, tips & tricks you have!

Here are the photos to help explain each step in more detail:
